To check if the tea leaves have been withered for the perfect amout of time, twist them in your hands to make sure they do not break.
To break down cells by adding pressure, use rolling machine for one hour. When the hour is up the leaves should have shrunk slightly, and the color should have darkened.
Add more pressure using machine, this should last 5 minutes, slowly squeezing the leaves, allowing evaporation.
Roll in machine for another hour, this is when oxidation truly starts.
Place out in the sun for 15-20 minutes in a covered container (in a thick layer of 20cm-30cm), this stage allows further oxidation. At this point, aroma, color, and taste have been determined.
Spread out leaves on large mats in a greenhouse to dry.
